Boy, that really shows the disadvantage LOH/LOX booster stages have due to all the weight they have to carry after SRM separation.
If we don't continuously lower the cost to access space, how are we ever going to afford to expand humanity out into space?

Yeh especially for 1st stage reuse since the 1st stage engine shut off happens so far down range!

Why does SLS escape tower not jettisoned earlier ?

You need the launch escape system until the SLS core stages from the upper stage. Which happens just before the stack gets to LEO.

Except that no booster stages that are HydroLox(LH2/LOX) are shown.

You are describing differences between designs that use a pure Booster stage, like the inline Saturn-V  and the Stage and a half designs(like STS) moreso than the fuel being used in their boosters. 
A Falcon-9 next to a Delta-IV heavy would show the pros/cons of a more energy dense fuel in a booster stage much better than the examples shown the video..

The center booster is still a part of the first stage of FH.

The center booster is still a part of the first stage of FH.

That is entirely dependent on how you classify things. FH is either a 2-stage, 2.5 stage, or 3-stage vehicle. There is no universal standard.
