Kerbal Space Program continues to keep my interest. Can be played, and played with, at many levels, including an open sandbox. Physics is just real enough, not so real as to generate a lot of waiting for something to happen, but gravity and orbital dynamics work in a semi-realistic fashion.

#1 favorite is Kerbal Space Program.

#2 favorite is Orbiter Simulator; both the 2010 and 2016 versions.

I recently found a neat little tablet-friendly game that works in Android and iOS. It's called...wait for it..."Space Simulator." I reviewed it on Amazon as less of a time sink than KSP and easier to learn than Orbiter, so what's not to like?
Good graphics, good physics, good tutorials with real spacecraft (Shuttle, Gemini, Apollo) and fictional (2001 Discovery & Orion shuttle, and SLS/Orion :D).
Bonus: a primary control method is the Apollo DSKY.
Those who can't do, write.

Star Citizen seems to have the best tech out there, but I wouldn't recommend buying it yet.

It's Spaceflight Simulator apknite for android. Solid 10/10; great mechanics, realistic phyisics, and vast possibilities, all in a simple, easy to use package. This is a very well made space game with trajectory paths, gravity encounters with various different planets, and a sandbox-style feel to it. Build your own unique spacecrafts and launch them into space.
