Doug,

If you really want to get back into modeling, consider printed paper models.  made out of paper and white glue, many are free and quite advanced.  Here for example:

and if you mess up, just print out a new part.  Easy to rescale, too.

Here's  the 1/144 version on my kitbashed Saturn C-8.  It was one of my earliest after my return to modeling, so it is in need of refurbishment and updating.

The first picture shows my original Direct version next to a Skylab and the 2nd shows the updated version (made with a Saturn I Block II S-IV stage).

And here is some work on the 1/72 version

The CSM painted, but not finished and the Direct Landing Stage, painted its base coat of white.  It will get some decals, but not much else.

And the nearly finished thrust structure.

Now I am just waiting on the mail for the shroud!

Great build... ...BUT, don't you think the ECS radiator panels etc would have been in quite different positions? At the very least, more like the Block I SM arrangement rather than Block II.
