That's a good question.  VA261 designation is my (our?) assumption, based only on propagating current Ariane 5 designation forward.

Ariane 5 and 6 "VA" numbers could be interleaved when both are launching?

"V" numbers for the last Ariane 4 and first Ariane 5 launches were interleaved.

Arianespace to launch eight new Galileo satellites
January 6, 2022

ESA and EUSPA have confirmed that Arianespace will launch eight additional Galileo satellites.
Arianespace will launch the first two satellites in 2022, leading to the Full Operational Capability of Galileo open service. Then, three successive launches on Ariane 62 in 2023, 2024 and 2025, will finalize the launch of the first generation of Galileo satellites and will increase the constellation resilience.

These will be the 13th to 16th Galileo missions by Arianespace, which has orbited all satellites in the constellation.
The European Union Agency for the Space Programme (EUSPA) has chosen Arianespace to launch four new Galileo satellites for Europe’s own satellite navigation system. With this order, EUSPA takes over the role of placing launch services contracts for Galileo from ESA, which acted so far in the name and on behalf of the European Commission and will continue to be the technical authority for these launches.

This order follows European Space Agency’s (ESA) order for the launch of four satellites in October 2021, and will complete the deployment of first-generation Galileo satellites.

These launches will take place from the Guiana Space Center (CSG), Europe’s Spaceport in Kourou, French Guiana. After a first launch this year for Galileo, carrying satellites from a previous order, in the first half of 2022, a second Soyuz launch in 2022 will orbit the first two satellites from this latest order. The next three missions will orbit two satellites each on Ariane 62, in 2023, 2024 and 2025.

“I would like to thank ESA and EUSPA, along with the European Commission for continuing to entrust us with their satellites,” said Stéphane Israël, CEO of Arianespace. “We’re very proud to once again be helping EU deploy its own global navigation satellite system. This additional order to the service of Galileo once again confirms Arianespace’s assigned mission of ensuring reliable access to space for Europe.”

Each of the eight satellites under this order, built by OHB System AG in Bremen, Germany, will weigh less than 730 kg. They will join the 28 Galileo satellites already deployed to date, as well as the two to be orbited in early 2022 from the Guiana Space Center by Arianespace.

Arianespace to launch PLATiNO 1 & 2 on Vega and Vega C
January 6, 2022

PLATiNO 1 and 2 are Earth observation satellites that will be launched on a Sun-synchronous orbit.
Both small satellites are due to be launched between 2022 and 2024.
PLATiNO is an all-electric multi-purpose small satellite platform developed in Italy, suitable for a wide range of applications (e.g. Optical, SAR, Telecom, etc.)

Arianespace has been awarded a launch contract by SITAEL, with the Italian Space Agency (ASI) as the final customer, to orbit PLATiNO 1 & 2 satellites, between 2022 and 2024 on Vega and Vega C. PLATiNO 1 and 2 are Earth observation small satellites operating on Sun-synchronous orbits. PLATiNO 1 will embark a Synthetic Aperture Radar (SAR), operating in the X band, while PLATiNO 2 will carry an optical thermal instrument.

“We are very proud of this new launch contract, which underlines the capacity of Arianespace’s launch solutions, here with Vega and Vega C, to address institutional needs at the most competitive conditions, even for very demanding missions within the 100-500kg class”, Stéphane Israël, CEO of Arianespace, declared. “This agreement also demonstrates Arianespace’s capability to support the development of new space initiatives embedded by governments and European institutions”.

PLATiNO is a versatile, multi-mission, high-tech, and all-Italian platform suitable for a wide set of applications that will be equipped with various instruments – both radar and optical – which guarantee optimal resolutions and an on-board computer capable of acquiring and downloading a large number of images.

The PLATiNO platform has been developed by a temporary consortium established between SITAEL, Leonardo, Thales Alenia Space (a joint venture between Thales -67% and Leonardo -33%) and Airbus Defense and Space; it has been designed to support a wide range of missions in different operational scenarios supporting from Earth observation to telecommunications and scientific missions. This platform ensures a reduction of development and operational costs within a frame of an extremely competitive market, supporting a strategic placement of the Italian industries in a sector where new space systems such as megaconstellations are arising.

Ariane 5 and 6 "VA" numbers could be interleaved when both are launching?

"V" numbers for the last Ariane 4 and first Ariane 5 launches were interleaved.

VA = Vol Ariane, as it is still an Ariane no reason to change (but never say never btw as most CSG terms seem to slowly move to english...) what will change are the serial number, currently they start with L5xxx however for Ariane 6 it will be FM1 FM2 etc. (FM for Flight Model)

Now that we know the passengers of VA257, and that we know that JUICE will be the last flight of Ariane 5, it thus remains 3 flights with "unknown" satellites.

If I am not mistaken, the potential satellites that will fly on Ariane 5 are :
- Eutelsat Hotbird 13F & 13G & VHTS
- Ovzon-3
- MTG-I1
- Heinrich Hertz
- Syracuse 4B

Do we have any idea which ones will actually fly on Ariane 5, paired with which other ones, and at what approximate date?

As of today, if we only consider launch dates given for each satellite in the Ariane 5 launch log, we have :
VA257, April 2022 : Measat 3D + GSAT 24
VA258, June 2022 : Eutelsat Konnect VHTS + OVZON 3
VA259, 3Q 2022 : Eutelsat 10B + Syracuse 4B
VA260, 4Q 2022 : Galaxy 35 + Galaxy 36 (as a stack) + MTG I-1
VA261, August 2023 (last flight) : JUICE

As Heinrich Hertz is now known to be launched in 2023, and as there will be no more satcom launch on Ariane 5 in 2023, just JUICE (see today's tweet from @ChrisG_NSF), we can deduce it was surely moved on Ariane 64.
