Here's a photo of Neil Armstrong's family viewing the launch of Apollo 11 from a boat.
It looks to be south of the NASA Causeway on the Banana River.

Interesting to see the contrast between Armstrong's family watching the launch alone on a boat in the Indian River with a view not much better than what most people in Titusville saw that day. I assume it was a boat owned or chartered by LIFE magazine.
Compare that to what Mike Mullane and Tom Jones both say about families watching launches at KSC. Their families watched the launch from a rooftop near the VAB with other astronauts nearby to explain or if necessary console familiy members.
I assume that LIFE magazine would have had astros on board to do the same.
