I don't understand what these things were doing on Columbia? There isn't much room to do experiments?

There is room to do small experiements in the mid deck, but Columbia was carrying SpaceHab, which is a laboratory in the cargo bay.

STS-107 was all science experiments, 57 to be exact as I recall.
